Tucked neatly below Fitzroy Street on Bourke Street in Surry Hills, Jane is hatted chef, Tristan Rosier’s swanky 1970’s-inspired modern Australian diner steeped in nostalgia, designed by industry fave’s interior architecture firm Luchetti Krelle.

The historic butcher’s site retains the polished tile façade along with vintage gold foil typography and an oversized polished brass-frame window synonymous with the era. The original timber-framed double doors have been freshly stained in matte-black, opening to an interior with a palette rich in saturated colours and textures.

A vintage 1970s smoked-glass and gold-tone metal pendant chandelier hangs low in the window, set above a circular dark Rosso Levanto marble table and macchiato-brown leather banquette for eight, complete with a lazy-susan. Bronzed mirrors reflect the charming street view and invite the natural light in, while a distinctly merlot-coloured poly-fibre lines the ceiling to balance acoustics. Grandstanding above the tabletops and running the length of the room is a generous, custom-built and hand-finished Italian bianco carrara marble bar with gold inlay and solid Australian walnut base—spanning an impressive five metres in length.

Taken from a reference photograph from Rosier’s childhood, a flower-like pattern adorns the bar splash-back, recreating a wallpaper emblazoned in the family’s memories from their beloved Clovelly beach house. Glassware is eloquently hung in strict rows above the bar, maximising the vertical space and ease of use. Sommelier Kyle Lenci’s all-Australian wines take pride of place lining the back-lit mirrored back wall.

All the furniture at Jane is custom-built, too. Eight buttery-soft biscotti leather and brass stools, each with a footrest and neighbouring handbag hooks line the handsome bar feature overlooking the theatre of the barmen at work. A luxurious mustard-coloured velvet corduroy fabric wraps the restaurant-long banquet seat with individual Australian timber tables and lemon-yellow upholstered timber seats lined in pairs. Underscored by the restaurants’ parquetry floors, granular white stucco-rendered walls and low-lighting akin to its brother restaurant Arthur, Jane is a refreshingly detailed trip down memory lane and a visual feast worthy of the house’ famed Pink Cake.
